Almond Baked Chicken

Chicken - Almonded BakedYield: 6 servings

Ingredients:

  • 2 lbs chicken breast tenderloins
  • 1 eggs and almond milk
  • 1 cup almond meal
  • 2 tbs chili powder
  • 1 tbs Italian seasoning
  • 1 tbs garlic powder
  • 1 tsp cayenne
  • Salt and pepper

Directions:

  1. Preheat oven to 400° F.
  2. Line a 13×9 baking pan with foil and grease it.
  3. Mix all dry ingredients on a plate.
  4. Beat eggs in a shallow dish.
  5. Dip chicken in egg and then dredge in dry ingredients.
  6. Place coated meat into baking dish and bake for 12 minutes each side.
  7. Broil the last 4-5 minutes.
